Vassilakis Estate Limited Edition is clearly not a soft background oil. The aroma is intensely fruity, fresh and aromatic, with green and herbaceous notes. On the palate it develops a firm structure with pleasant bitterness and, above all, a pronounced peppery finish.
Use it generously with toasted bread, grilled vegetables, pulses, marinades, grilled meat, lamb and robust salads. A few good pours are often enough to give a dish noticeably more tension and character.
Polyphenols are a collective name for various naturally occurring phenolic compounds in olive oil. Among other things, they play a role in the oil's oxidative stability, while different compounds contribute to the characteristic bitterness and peppery sensation of fresh extra virgin olive oil.
A higher figure does not automatically mean a better-tasting oil. Balance remains important. What makes Vassilakis Estate particularly interesting is that the high measured level is combined with a pronounced yet gastronomically useful flavour profile.

The family is based around the Mirabello Bay area in the east of the island, a landscape where olive trees have been part of agriculture and everyday life for generations.
The combination of a warm Mediterranean climate, Koroneiki and very early harvesting gives this oil its distinctive character. The Limited Edition therefore reveals a very different side of Greek olive oil from the softer styles intended for broad everyday use.

Harvesting this early comes at a cost. The amount of oil obtained per kilogram of olives is lower than later in the season. In return, early olives can possess exactly the fresh and powerful characteristics that define this Limited Edition.

Vassilakis Estate received further international recognition in 2025. At the TerraOlivo International Olive Oil Competition, the Estate extra virgin olive oil received a Gold Quality Award.
