Provence brought together in one bottle
While the single-varietal oils of Château d’Estoublon each allow one Provençal olive variety to speak for itself, this PDO Vallée des Baux-de-Provence deliberately brings several personalities together. It is a blend of Béruguette, Bouteillan, Grossane, Salonenque and Picholine.
Together they show exactly why the Vallée des Baux is such a special olive-oil region: green and vibrant, yet elegant, balanced and gastronomic at the same time.
This is not simply an olive oil from Château d’Estoublon. In many ways it is the oil in which the terroir and style of the entire house come together.
Château d’Estoublon describes this blend as balanced, intense and vegetal. Distinct green notes come through in both aroma and flavour, including freshly cut grass.
The different olive varieties give the oil greater depth and layering than a single-varietal oil. Fruitiness, gentle bitterness and pepperiness complement one another without any single element becoming dominant.
The finish is fresh and lightly peppery. This gives the oil enough character for expressive dishes while retaining the elegance that is so characteristic of Estoublon.
A gastronomic all-rounder
Its combination of fruitiness, green aromas and controlled bitterness and pepperiness makes this oil extremely versatile. It works beautifully with fish, shellfish, grilled vegetables, tomatoes, salads, pasta and lighter meat dishes.
Its complexity also comes through beautifully with good bread. This is an olive oil that genuinely adds something at the table without taking over the entire dish.
The protected designation of origin PDO Vallée des Baux-de-Provence firmly links this olive oil to its region, its traditional olive varieties and its production heritage. This blend therefore expresses not only Estoublon’s craftsmanship but also the character of one of Provence’s best-known olive-oil regions.

From its olive groves and own mill to the château, gastronomy and beautiful packaging, Estoublon treats olive oil with almost the same attention to presentation and experience as a French luxury product.
The modern history of Estoublon is closely connected to the Schneider and Reboul families. The once-neglected château and surrounding estate were restored with enormous ambition and transformed into an exceptional wine and olive-oil estate.
The vision was never simply about farming. Estoublon was meant to become a destination again: a place where wine, olive oil, gastronomy, hospitality and design form one complete experience.
In later years the château entered another glamorous chapter. Today Estoublon combines serious olive growing and winemaking with an image that feels closer to a French fashion or luxury house than to a traditional farm.
My connection with Château d’Estoublon goes beyond simply selling its olive oils. I got to know the Schneider and Reboul families personally and had the opportunity to experience the estate itself on several occasions.
One of the most memorable moments came after the major renovation of the château. I had the privilege of being the first guest to stay overnight in the renovated château. During that visit there were also representatives from Big Green Egg and journalists from De Telegraaf, including food journalist Felix Wilbrink.
Even from the bottles alone, you can see that Estoublon is different. But when you walk through the olive groves yourself, visit the mill, step inside the château and experience the hospitality, the whole story falls into place.
That is why this olive oil also has a personal story for me. It is not simply an organic extra virgin olive oil from Provence, but a product from a house whose people, estate and ambitions I have had the pleasure of getting to know personally.
This Vallée des Baux-de-Provence PDO is certified organic. Château d’Estoublon presents it as one of its characteristic blends, bringing the different olive varieties of the estate together in balance.
The producer also lists 11 gold awards for this olive oil. A fitting confirmation that behind all the glamour and presentation of the château there is serious quality in the bottle.
