Merula has a distinctly soft style. On the nose and palate you find sweet apple, ripe banana, gentle herbs and subtle hints of red fruit. The finish is rounded and leaves a pleasant almond note.
This makes Merula extremely versatile. Delicious with salads, pasta, fish, vegetables, bread, soups and cold dishes, while its gentle profile also makes it an excellent extra virgin olive oil for everyday use in the kitchen.
Four Spanish olive cultivars come together in Merula. Arbequina can add softness and fruitiness, while Picual and Hojiblanca can contribute more structure and green characteristics. Morisca is strongly associated with Extremadura and adds to the regional identity of the blend.
What makes Merula special is that none of the four varieties dominates. It is all about harmony: fruity and aromatic, but above all rounded, soft and easy to pair.
Merula comes from Extremadura in western Spain. The olive groves of Marqués de Valdueza surround the Perales de Valdueza estate near Mérida.
Morisca is one of the olive cultivars strongly associated with this region. In Merula it is combined with the better-known Arbequina, Picual and Hojiblanca.
