Sierra del Conde is green and fruity without becoming aggressive. You taste apple, almond, green grass and tomato, followed by light pepperiness and gentle bitterness.
That profile makes it incredibly versatile. Over salads and vegetables, in sauces and marinades, with pasta and fish, for dressings, but also simply for cooking and frying.
It is exactly the kind of olive oil where you do not have to stop and wonder whether it suits the dish. It simply does a lot very well.
Sierra del Conde is produced by Naturvie in Extremadura, in western Spain. From Guareña, the producer works with several olive cultivars from the surrounding area.
Anyone who only knows Naturvie from its more exclusive single-cultivar oils and special editions such as Full Moon Club sees another side of the same producer here: making a good extra virgin olive oil specifically intended to be used generously and often.
