A refined extra virgin olive oil made from 100% Salonenque from Provence. Elegant and fresh with citrus, green apple, almond and artichoke. A smooth gastronomic olive oil with the presence of a true French luxury house.
Where olive oil almost becomes haute couture
In the heart of the Alpilles, in the beautiful Vallée des Baux-de-Provence, lies Château d’Estoublon. An impressive Provençal estate where olive groves, vineyards, gastronomy, architecture and the French art of living come together.
Estoublon is anything but an ordinary olive oil producer. Everything about the house reflects refinement: from the château and gardens to its own olive mill and the striking bottles in which the different Provençal olive varieties are presented.
Salonenque fits that character perfectly. This is not an oil designed to impress through extreme bitterness or pepperiness, but an elegant and subtle single-varietal olive oil where finesse and freshness take centre stage.
This extra virgin olive oil is made from 100% Salonenque. Its style is fresh, delicate and refined, with attractive citrus aromas and green notes.
You will also find nuances of green apple, almond and artichoke. Bitterness and pepperiness remain restrained, keeping the oil particularly elegant and approachable.
This is an olive oil where refinement matters more than sheer power: subtle enough for delicate dishes, yet aromatic enough to remain clearly recognisable.
For dishes where finesse matters
Salonenque is particularly well suited to dishes where the olive oil should refine and support rather than dominate. Think of light salads, shellfish, fish, delicate vegetables, mozzarella and refined starters.
Château d’Estoublon itself even pairs the oil with marinated scallops and with strawberries and a touch of lemon. That says a great deal about the fresh, elegant character of this Salonenque.
Perhaps the clearest sign that Château d’Estoublon goes far beyond simply producing wine and olive oil is its membership of the prestigious Comité Colbert.
This French association brings together houses known for exceptional craftsmanship, luxury, gastronomy, culture and savoir-faire. Estoublon therefore belongs to a world in which product quality is only one part of the story; origin, craftsmanship, presentation and experience matter just as much.
That philosophy can be seen everywhere. From the carefully tended olive groves and its own mill to the château, restaurant and almost couture-like bottles: at Estoublon, the entire picture has to be right.
The modern history of Estoublon is closely connected to the Schneider and Reboul families. The château and surrounding estate were carefully restored and transformed into an exceptional wine and olive oil estate.
The ambition went far beyond farming. The château was meant to become a destination again: a place where gastronomy, hospitality, design, wine and olive oil come together.
In later years, Estoublon entered a new chapter and the glamour surrounding the estate increased further. Today, it is one of those rare producers where a bottle of olive oil says almost as much about lifestyle and the French art de vivre as it does about the product itself.
My connection with Château d’Estoublon goes beyond simply selling its olive oils. I got to know the Schneider and Reboul families personally and had the opportunity to experience the estate itself on several occasions.
One of the most memorable moments came shortly after the extensive renovation of the château. I had the privilege of being the first guest to stay overnight in the renovated château. During that visit, there were also representatives from Big Green Egg and journalists from De Telegraaf, including food journalist Felix Wilbrink.
You can of course look at photographs of the façade, gardens and olive groves. But only when you walk through the estate yourself, see the mill, sit at the table and experience the atmosphere of the château do you really understand how special Estoublon is.
That personal visit still plays a part in the way we value this house today. For us, Château d’Estoublon represents not only fine French olive oil, but also hospitality, history, ambition and an exceptional sense of style.
Château d’Estoublon manages its own olive groves and has its own mill on the estate. The Salonenque olives are processed quickly after harvesting so that the fresh and refined character of this Provençal variety is preserved as much as possible. This control from grove to bottle is an important part of the Estoublon style.
