La Patràun is made exclusively from Peranzana olives, one of Italy's most refined and highly regarded olive varieties. It is cultivated mainly around San Severo in northern Puglia. According to tradition, the variety was introduced centuries ago from Provence and has flourished ever since in the fertile soils of southern Italy.
