It is precisely the differences between these four olive varieties that make this set so fascinating. From accessible and elegant to powerful and outspoken. A beautiful way to discover how much one olive variety can influence aroma, flavour, bitterness and pepperiness.
The great Andalusian classic. Intense green fruit, green tomato and vegetal notes, with clear bitterness and a powerful peppery finish.
Softer and friendlier in character. Fruity and aromatic, with a refined style and noticeably less bitterness and pepperiness than Picual.
Fresh, green and aromatic with notes of freshly cut grass, green herbs and almond. Elegant bitterness and pepperiness provide tension.
The Italian olive variety in the collection. Aromatic and refined, with herbal green notes and an elegant balance of fruit, bitterness and pepperiness.
One producer shows just how many flavours olive oil can have
A good monocultivar may be the most beautiful way to get to know an olive variety. Because each oil is made from a single cultivar, the character of that olive becomes much clearer. This set places four completely different varieties next to one another.
The fact that they all come from the same producer makes the comparison even more interesting. The producer, philosophy and quality standard remain the same; the olive changes. That allows you to taste much more clearly what Picual, Arbequina, Hojiblanca and Frantoio each bring to the table.
Oro Bailén is produced by Aceites Oro Bailén Galgón 99 near Bailén in Jaén. The house controls the complete process from olive grove to bottling. In this set, Oro Bailén uses that expertise to allow four individual olive varieties to show their own distinct character.
