When the sun goes down and the temperature drops, the olives are picked at night. Cooler fruit means maximum freshness, minimal oxidation and an exceptional aromatic profile. Immediately after harvesting, the olives are cold-pressed on the estate itself. Everything revolves around control, quality and purity.
The flavour profile
Full Moon is intensely green, fruity and lively. You can taste notes of freshly cut grass, green almonds, tomato leaves and artichokes.
