A good passata really needs very little help. If you start with ripe, flavourful tomatoes, there is no need to add salt, sugar, colourings, flavourings or emulsifiers.
It also leaves you in control in the kitchen. Want salt? Add it yourself. Want to make the sauce sweeter with onion, carrot or slow cooking? That's up to you as well. The bottle provides only the foundation: tomato.
The classic passata made from ripe red tomatoes is the all-rounder. Full tomato flavour, natural sweetness and enough freshness to work in both simple sauces and long-cooked dishes.
This version is made exclusively from ripe cherry tomatoes. Naturally rich in sugars and aromas, giving the passata a noticeably sweet, intense and almost velvety flavour – without any added sugar.
Yellow tomatoes produce a softer, milder passata with less fresh acidity than many red tomatoes. Their beautiful golden colour also makes this version especially attractive for refined dishes.
This is the most versatile of the three. Ideal when you want a pure tomato base that you can build yourself with olive oil, garlic, onion, herbs, meat, fish or vegetables.
Cherry tomatoes naturally contain plenty of flavour and natural sugars. That makes this passata richer, sweeter and more aromatic than the classic version, without adding a single grain of sugar.
Yellow tomatoes have a softer, milder character and produce a sauce with subtle natural sweetness. The lighter flavour allows delicate ingredients to shine, while the golden colour gives dishes an entirely different appearance.
For almost any Italian tomato sauce.
When tomato itself is the most important ingredient.
For light, delicate and gastronomic dishes.
No sauce that has already decided how much salt, sugar or seasoning you should have. No additives designed to make tomatoes taste like tomatoes. Just the ingredient itself. Choose classic for versatility, cherry for maximum tomato flavour or yellow for softness and elegance. The rest is up to you in the kitchen.
