With classic dark balsamic, colour is part of its character. That is beautiful with meat, cheese or dessert, but less practical when you want to present white fish, white asparagus or a fresh salad beautifully.
White balsamic offers an elegant alternative. You still get the combination of fruity sweetness and refined acidity, without turning a pale sauce, vegetable dish or fish preparation dark brown.
Think of a fennel salad, scallop carpaccio, grilled green asparagus or a piece of white fish. With dark balsamic, the appearance changes immediately. This white version keeps the natural colours of the ingredients intact.

Shave fennel and a crisp sweet apple very thinly. Mix with rocket, soft goat's cheese and walnuts. Add Extra Virgin olive oil, sea salt and a generous splash of Gocce White.
Slice very fresh scallops thinly. Add a little Extra Virgin olive oil, finely grated lemon zest, sea salt and a few drops of Gocce White. Serve immediately and well chilled.
Slice ripe strawberries and mix with a small amount of Gocce White. Serve with a spoonful of mascarpone and finely sliced basil. Finish with toasted almonds if desired.
