Balsamic Vinegar of Modena I.G.P. is a protected Italian speciality from Modena. The I.G.P. designation protects its geographical link and production according to the relevant specification, but the rules are clearly different from those of Aceto Balsamico Tradizionale di Modena D.O.P.
That distinction matters. Within the I.G.P. category there can be major differences in style, concentration and ageing. This Gocce stands out through its minimum four-year ageing, the influence of seven different woods and the absence of additives.
The two medals on this Gocce should not be read as two prizes won in a competition. They are part of the way the balsamics within this range are classified according to level and ageing.
Within the Gocce range, the scale rises accordingly: this four-year version carries 2 Medals, the 10-year version 5 and the 15-year version 7. This makes it easy to see at a glance where each balsamic sits within the series.
This Gocce is influenced by seven different types of wood during ageing. Together they contribute to the layering and warm, rounded character of the balsamic.
Gocce belongs to Acetaia Leonardi, a producer from the Modena area with a long family tradition in balsamic vinegar. Grapes, must, wood and time together form the basis of the different balsamics in the range.
Because the same producer offers several ageing levels side by side, it is particularly interesting to taste how longer contact with wood gradually changes the character of balsamic.
Four years of ageing give this Gocce enough softness and depth while keeping the fresh side of balsamic clearly present. That makes it highly versatile, from salads and vegetables to meat, cheese and desserts.
Arrange ripe tomatoes and burrata on a plate. Add good Extra Virgin olive oil, sea salt and basil. Drizzle a small amount of Gocce over the tomatoes and burrata just before serving.
Roast small potatoes with olive oil, rosemary and sea salt until golden. Remove from the oven and add a small splash of balsamic only once plated. Delicious with chicken or grilled meat.
Slice ripe strawberries and mix them with a small amount of Gocce. Leave for a few minutes, serve with vanilla ice cream and finish with a few more drops of balsamic.
Four years of ageing give this balsamic noticeably more depth than a simple young balsamic without making it so concentrated that you only want to use it by the drop on special dishes. With its 2-Medal classification, seven woods and broad versatility, we consider it a particularly good introduction to the Gocce range from Modena.
