With pure Extra Virgin, all aromas come exclusively from the olives. With this Galantino, herbs are deliberately added. Alongside the fruitiness and mouthfeel of olive oil, you therefore get an immediate herbal, Mediterranean layer of flavour.
It is not a replacement for every Extra Virgin in the kitchen, but it is an exceptionally useful flavouring oil. One drizzle can be enough to give simple vegetables, pasta, bread or chicken noticeably more character.
While truffle is highly distinctive and chilli mainly brings heat, herb oil can almost quietly become part of everyday cooking. Use it with pasta, pizza, roasted vegetables, potatoes, chicken, fish, salads and bread, or as a simple base for a marinade.
For 2: 1 courgette, 1 red pepper, 1 red onion, 250 g cherry tomatoes, 1 burrata, sea salt and 3 tbsp Galantino Italian herb oil.
Roughly chop the vegetables and toss with 2 tablespoons of herb oil and a little sea salt. Roast for about 25 minutes at 210°C. Transfer to a serving dish, place the burrata in the centre and finish with the final tablespoon of herb oil and black pepper.
For 2: 2 chicken breasts or thighs, 3 tbsp Galantino herb oil, 1 lemon, sea salt, black pepper and 250 g small potatoes.
Mix the chicken with 2 tablespoons of herb oil, lemon juice, salt and pepper. Place in a roasting dish with halved potatoes and cook for about 30 minutes at 200°C until golden and cooked through. Finish with a little herb oil and lemon zest.
For 2: 200 g pasta, 250 g cherry tomatoes, 125 g mozzarella, 3 tbsp Galantino herb oil, Parmesan and black pepper.
Cook the pasta until al dente. Briefly fry the halved tomatoes in 1 tablespoon of herb oil. Add the pasta and a splash of cooking water and toss together. Remove from the heat, add mozzarella and finish with the remaining herb oil, Parmesan and black pepper.
Some flavoured oils have one very specific purpose. This one does not. Roasted vegetables, a simple salad, pasta, pizza, bread, grilled chicken or a piece of fish: almost anywhere you would normally use olive oil and herbs, this Galantino can partly combine both roles.
