With a pure Extra Virgin, aroma and flavour come exclusively from the olive. Here Galantino deliberately adds chilli to create a second layer of flavour. You therefore get not only the fruitiness and mouthfeel of olive oil, but also warmth and spice.
So this category is not a replacement for pure Extra Virgin. It is a culinary tool: one drizzle and a dish instantly heads in a different direction.
Galantino recommends the chilli oil with pulses, soups and robust dishes. We would definitely add pizza, pasta, grilled vegetables, eggs, potatoes and meat. Best of all, you can control the level of heat individually on each plate.
For 1 pizza: pizza dough, tomato sauce, mozzarella, 6 slices of spicy salami, half a burrata, basil and 1–2 tbsp Galantino chilli oil.
Top the pizza with tomato sauce, mozzarella and salami and bake as hot and crisp as possible. Add the burrata and basil after baking, then finish with chilli oil. This keeps the heat fresh and gives every bite just the right kick.
For 4: 800 g canned tomatoes, 1 onion, 500 ml vegetable stock, a splash of cream, basil, salt and Galantino chilli oil.
Soften the onion, add the tomatoes and stock and simmer gently for 20 minutes. Blend until smooth and stir in a little cream. Serve in bowls and finish each portion with its own drizzle of chilli oil so everyone can choose their preferred level of heat.
For 2: 400 g chickpeas, 200 g spinach, half a lemon, cumin, sea salt and 2 tbsp Galantino chilli oil.
Warm the chickpeas with a pinch of cumin. Add the spinach and let it wilt briefly, then season with salt and lemon juice. Remove from the heat and stir through the chilli oil. Serve with bread or alongside grilled meat or fish.
The great advantage of chilli oil is control. You do not have to make the entire pan spicy. Put the Galantino on the table and give one plate two drops and the next a generous drizzle. Especially in families or at dinner with different preferences, that is remarkably practical.
