The name on the bottle can easily make you think this balsamic comes from France. It does not. Château d'Estoublon is located in Provence, but this balsamic is produced in Italy.
Estoublon selects it as part of its gastronomic range. That fits the château beautifully: a house where good olive oil, wine and refined Mediterranean products naturally belong on the same table.
According to Château d'Estoublon, this balsamic is aged for at least 60 days in oak barrels. Culinarily, that puts it in a very different category from extremely long-aged, syrupy balsamics intended almost exclusively for use by the drop.
Here, the focus is on balance and usability: enough fruit and rounded sweetness, clearly defined balsamic acidity and a subtle influence from the oak. That makes it a balsamic you can genuinely cook with.
Sweet and acidic aromas come together beautifully on the nose, followed by fruity notes and gentle oak. On the palate, the characteristic balsamic acidity becomes more prominent, after which delicate fruit notes linger.
This makes it more refined than a simple table vinegar, yet fresher and more versatile than a very old, highly concentrated balsamic.
Château d'Estoublon recommends it not only with salads and vegetables, but also with grilled meat and refined fish dishes. That says a great deal about its style: enough character for beef and veal, yet elegant enough for scallops, salmon and even lobster.
Sear scallops briefly until golden. Serve on a smooth cauliflower purée with a little good Extra Virgin olive oil. Add a few drops of balsamic just before serving and finish with sea salt.
Cook a veal chop with butter and a few sage leaves. Let the meat rest, pour away excess fat and deglaze the pan with a small splash of balsamic. Add a spoonful of water and spoon the quick jus over the meat.
Roast peppers, red onion, courgette and cherry tomatoes with Extra Virgin olive oil and sea salt. Serve warm with burrata, fresh basil and a small splash of Estoublon balsamic.
Château d'Estoublon is all about excellent Mediterranean products that are meant to be genuinely used at the table. This balsamic fits that philosophy beautifully. Organic, clearly fruity and sweet-sour, with enough character from the oak without becoming excessively heavy or syrupy. We particularly like its versatility with fish and shellfish: it shows just how refined and adaptable a good Balsamic Vinegar of Modena can be.
