This gastronomic tour de force is the pinnacle in the Cuadrat Valley range. The olives are picked and pitted very early before following the classic steps of olive oil making. The aromatic score is characterized by a green fruitiness, a stronger taste and aroma than traditionally produced oils. An oil with good length in the mouth, a surprising bitterness and spiciness for the Arbequina variety. On average, 12 kg of Arbequina is needed to obtain 1 liter of PITTED ELIXIR.

Born in Cádiz in the first century AD, the Roman agronomist Lucius Moderatus Columella, a great connoisseur of the olive tree and olive oil, notes in his reference work on agriculture in Roman times: "For the manufacture of oil, the hanging millstones provide the best execution because, depending on the size of the olives, they can be lowered or raised so that the stone does not break, which spoils the taste of the oil." Cuadrat wanted to revive this thousand-year-old tradition of pitted olive oil, with a more intense fruitiness and a more powerful green color. Recent studies show that destoning improves the organoleptic and nutritional quality of olive oil. It is thus more resistant to the auto-oxidation phenomenon observed in oils obtained from hammer mills.​
