Fleur de Sel forms only under specific conditions of sun, wind and evaporation. A thin layer of fine crystals develops on the surface of the salt marshes. These are carefully collected by hand before they can sink to the bottom.
Precisely because the process is so delicate, Fleur de Sel is much rarer than ordinary sea salt. Its texture remains light and gently crisp, and the crystals dissolve less abruptly than fine table salt.
Île de Ré lies off the French Atlantic coast, opposite La Rochelle. The island has been closely connected with salt production for centuries. Salt marshes, sea breeze and sunshine create the landscape in which the local sauniers practise their craft.
Fleur de Sel is harvested there entirely by hand, without mechanisation, additives or chemical treatment. Since 2024, Fleur de Sel de l’Île de Ré has officially carried the European IGP designation.
The beauty of Fleur de Sel is not only in its flavour, but also in its texture. The crystals are light and gently crisp. You first notice a subtle crunch, followed by the saltiness itself.
That makes Fleur de Sel particularly interesting as a finishing salt: a small amount on the plate can have more impact than a larger quantity of salt that completely dissolves during cooking.
Gastronomy does not always need to be complicated. Pour a good Extra Virgin olive oil onto a plate, add a few crystals of Fleur de Sel and serve with fresh bread. Precisely because there are so few ingredients, you can clearly taste what quality does.
