How do you choose between so many great organic olive oils?
For this set, we did not simply follow one ranking. We looked at international performance, the reputation of the producers and the quality these oils have demonstrated over several harvests. The result is a selection of three organic Extra Virgin olive oils that each belong to the absolute world elite in their own way.
And it is precisely their differences that make this set so interesting. Único shows what happens when Spanish Picual is grown in Sicily. Rincón de la Subbética represents perhaps one of the ultimate expressions of Andalusian Hojiblanca. Oro Bailén demonstrates just how powerful, green and at the same time refined organic Picual from Jaén can be.
Único is an extraordinary olive oil in more ways than one. It is produced in Sicily from 100% organic Picual, an olive variety best known from the Spanish province of Jaén but which develops a distinctive expression in the Sicilian climate. Green, intense and complex, with plenty of freshness and a beautiful balance between fruitiness, bitterness and pepperiness.
With Único, Miceli & Sensat demonstrates that terroir can be at least as important as the original home of an olive variety. The result belongs among the international elite and makes this Sicilian Picual a fascinating counterpart to the Spanish Picual in the same set.
Rincón de la Subbética has become an icon among organic olive oils. This 100% organic Hojiblanca from Priego de Córdoba combines intense green aromas with exceptional finesse. Green tomato, artichoke, thyme, mint and almond create a complex aromatic profile in which fruitiness, bitterness and pepperiness come together beautifully.
Rincón’s international record is exceptional. Harvest after harvest, this olive oil belongs among the great names of the international olive oil world. For the 2024/2025 harvest, Rincón even reached number 1 in the overall World's Best Olive Oils ranking. An organic oil that excels not only within the organic category, but can compete with any top olive oil.
With this organic Picual, Oro Bailén shows why Jaén has such a formidable worldwide reputation for olive oil. The oil is intensely green and fresh, with characteristic aromas of tomato plant, freshly cut grass and green almond. Bitterness and pepperiness are clearly present, yet exceptionally precise and controlled.
It is also a fascinating oil to taste directly alongside Único. Both are made from Picual and both are organic, yet climate, soil and production methods result in completely different oils. That is exactly what makes this set so interesting.
Perhaps the most enjoyable aspect of this selection is that you are not getting three more or less similar organic olive oils. You taste two completely different interpretations of Picual alongside an expressive Hojiblanca: Sicily versus Jaén, followed by Priego de Córdoba.
This makes it a wonderful set for a genuine side-by-side tasting. Pour the same amount of oil into three small tasting glasses or dishes and taste them first on their own. Only then do you really notice just how great the differences in aroma, bitterness, pepperiness, texture and finish can be.
