Cantabrian anchovy fillets in extra virgin olive oil
Not all anchovies are created equal. Once you have tasted Cantabrian anchovies, you immediately understand why they are considered the absolute best in the world.
These anchovies are caught exclusively in the spring in the cold, nutrient-rich waters of the Cantabrian Sea, between northern Spain and western France. This is precisely when the fish are at their peak: firm in texture, rich in flavor, and perfectly balanced. The combination of deep waters and strong currents ensures exceptional quality.
After being caught, the anchovies are carefully selected, cured using traditional methods, and hand-processed into exquisite fillets. The result is a full, mellow flavor, free from the harsh saltiness that characterizes many cheaper supermarket anchovies. Moreover, the fillets are firmer and meatier, and they remain beautifully intact.
The anchovies are then preserved in premium extra virgin olive oil from Frantoio Galantino. This Italian olive oil enhances the fish with a soft, fruity note without overpowering the anchovy's natural character. This creates a perfect balance between the intense umami of the fish and the refined aromas of the olive oil.
While supermarket anchovies often come from various fishing grounds, undergo rapid processing, and are intended for everyday use, here you are choosing a high-quality artisanal product.
