With pure Extra Virgin, aroma and flavour must come entirely from the olives themselves. In this Galantino, fresh basil is deliberately used to create a second layer of flavour. The result is olive oil that also functions immediately as a herb-infused condiment.
Basil oil is therefore particularly useful when you want to add a fresh green Mediterranean touch quickly. One drizzle can make the difference between tomato with mozzarella and a dish that suddenly tastes like lunch on an Italian terrace.
Galantino recommends this oil with sauces, bruschetta, pasta, pizza, caprese, mozzarella and tomatoes. It also works beautifully with grilled courgette, white fish, potatoes, burrata or in a simple dressing.
For 2: 3 ripe tomatoes, 1 burrata or 200 g mozzarella, 2–3 tbsp Galantino basil oil, sea salt and black pepper.
Slice the tomatoes and arrange them on a platter. Place the burrata or mozzarella between them and season with sea salt and pepper. Drizzle generously with basil oil just before serving. Very little else is needed.
For 2: 200 g spaghetti, 250 g cherry tomatoes, 40 g Parmesan, 3 tbsp Galantino basil oil, sea salt and black pepper.
Cook the spaghetti until al dente. Briefly fry the halved tomatoes in a little regular olive oil and add the pasta with a splash of cooking water. Remove from the heat and toss through the Parmesan and basil oil. Finish with black pepper.
For 4 bruschette: 4 slices of sturdy bread, 150 g ricotta, 2 ripe tomatoes, Galantino basil oil, sea salt and black pepper.
Toast the bread until crisp and spread with ricotta. Spoon over the finely chopped tomatoes and season with salt and pepper. Finish each bruschetta with a generous drizzle of basil oil. Simple, but that is exactly why it works.
Fresh basil is wonderful, but it is not exactly famous for impressive longevity. This Galantino is therefore especially useful for dishes where you want that fresh, green character without first having to check whether the basil plant is still among us.
