Two Sicilian extra virgin olive oils from Frantoio Galioto side by side: the smooth and fruity N°03 Moresca and the more intense N°04 D.O.P. Monti Iblei. A beautiful set for discovering two distinctly different Sicilian styles.
Two faces of Sicilian olive oil
This set brings together two very different extra virgin olive oils from Frantoio Galioto. We discovered them during our visit to Olio Capitale 2025, and it was precisely the contrast between the two that made them so interesting.
The N°03 Moresca is smooth, fruity and refined. The N°04 D.O.P. Monti Iblei has noticeably more power, with green notes, gentle bitterness and pepperiness and a fresh, nutty finish.
Together, they are not simply two similar bottles, but rather a small tasting journey through two different Sicilian styles.
Galioto N°03 is made from 100% Moresca. It is the more delicate of the two oils, with friendly fruitiness and a smooth, elegant style.
For that reason, N°03 is particularly suitable for dishes where the olive oil should support and refine the flavours without overpowering them.
Try it with vegetables, fish, light pasta dishes or simply with good bread.
Galioto N°04 carries the protected designation of origin D.O.P. Monti Iblei. The oil has an intense golden-yellow colour with delicate green reflections and a noticeably more pronounced character than N°03.
Its flavour reveals notes of lettuce, fresh broad beans and celery. Gentle bitterness and pepperiness provide extra tension, followed by a fresh, nutty finish.
This oil pairs beautifully with soft cheeses, grilled vegetables, fish, mushrooms, pasta and crusty bread.
From delicate to more powerful
This set is particularly well suited to tasting the two oils consciously alongside one another. Start with the smooth N°03 Moresca and then move on to the more powerful N°04 D.O.P. Monti Iblei.
It is an excellent way to experience how much the olive variety, origin and production style can influence flavour, even when both oils come from the same Sicilian producer.
