The 10-year Gocce with 5 medals is a Balsamic Vinegar of Modena I.G.P. and must therefore comply with the official rules governing that protected designation. Pregiato Serie 10, on the other hand, is described by Acetaia Leonardi as a Balsamic Condiment. This gives the producer greater freedom to pursue a particular flavour, concentration and balance.
An officially protected product category. Its composition and production must stay within the rules for Balsamic Vinegar of Modena I.G.P. The 5 medals are the recognisable commercial quality classification within this Gocce range – not competition medals and not an official I.G.P. grade.
Not Balsamic Vinegar of Modena I.G.P., but a balsamic condiment. Leonardi is therefore not tied to the same I.G.P. recipe and can focus more freely on the desired flavour and texture. The producer describes Pregiato as intensely aromatic, pleasantly velvety and highly versatile.
The absence of I.G.P. therefore does not automatically mean that a balsamic is of lower quality. It primarily means that the product is not sold within that specific protected product category.
With Pregiato, Leonardi uses the designation Balsamic Condiment, allowing room for its own style. With the 10-year Gocce I.G.P., you know the balsamic has been produced within the official rules for Balsamic Vinegar of Modena I.G.P.
Acetaia Leonardi describes Pregiato Serie 10 as a refined condiment with intense, penetrating aromas, aged for ten years in wood and pleasantly velvety in texture.
That makes it especially attractive when you want a rounded, rich balsamic flavour without necessarily requiring the product to carry the official I.G.P. designation.
Pregiato Serie 10 works with salads, raw and cooked vegetables, grilled and roasted meats, boiled meats, omelettes, soft and mature cheeses, cured meats and seafood. This is clearly not a balsamic intended only for dessert or as a decorative finishing drop.
Serve pieces of mature Parmigiano Reggiano with thin slices of ripe pear. Add a few drops of Pregiato Serie 10 just before serving. It really needs very little else.
Cook beef medium-rare, allow it to rest and slice. Serve with rocket, Parmigiano and Extra Virgin olive oil. Finish with a few drops of Pregiato over the meat.
Serve ripe strawberries with good vanilla ice cream. Add a few drops of Pregiato and, if you like, some toasted almond. Use sparingly: the balsamic should deepen the fruit rather than overpower it.
Do you specifically want a Balsamic Vinegar of Modena I.G.P. with Gocce's recognisable 5-medal classification? Then choose the 10-year I.G.P.
Are you looking instead for a velvety balsamic condiment where Leonardi has greater freedom to shape flavour and texture? Then Pregiato Serie 10 is the more interesting choice. Not higher or lower in rank – simply a different route to ten years of balsamic ageing.
On its own, Pregiato Serie 10 is simply a beautiful balsamic speciality aged for ten years. Place it beside the 10-year Gocce I.G.P., however, and it shows how interesting balsamic can be: the same producer, the same ageing period, but two different product categories and therefore two different interpretations. One offers the certainty of the I.G.P. rules; the other offers the freedom of a condiment.
