The Gocce balsamic pearls with 10-year-aged IGP balsamic vinegar are more complex and somewhat richer in flavour than the fruity variety with raspberry. They pair well with elegant dishes where the deep notes of wood ageing and grape concentrate really come into their own. Here are some great uses:
