From the rocky hills of southeastern Sicily
Galioto N°04 DOP Monti Iblei comes from Ferla in the heart of southeastern Sicily. Altitude, limestone-rich soils and a Mediterranean climate shape a distinctive style of olive oil here.
Frantoio Galioto combines two traditional Sicilian varieties: Tonda Iblea and Moresca. Together they create a fresh, aromatic oil with enough bitterness and pepperiness to give real character.
Not an extreme powerhouse, but unmistakably Sicilian: green, fresh and with the wonderful tomato character associated with the Monti Iblei.
The aroma reveals green tomato, freshly cut grass, artichoke and fresh herbs. Green, vegetal and unmistakably Mediterranean.
Fruitiness leads on the palate, followed by pleasant bitterness and a peppery lift. No harsh peaks, but a lively and beautifully balanced olive oil.
It is precisely this combination of freshness, tomato and herbs that makes N°04 so distinctive.
Tonda Iblea is famous for green tomato and herbaceous aromas. Moresca adds fruitiness, roundness and balance.
Together they create complexity without making the oil difficult: expressive enough for enthusiasts, harmonious enough to use often.
The protected DOP Monti Iblei designation links this olive oil directly to its geographical origin and defined production requirements.
N°04 is not trying to be a generic Italian olive oil. It deliberately expresses Ferla and the Monti Iblei. Good regional olive oil lets you taste not only the olive, but the place it came from.
Harvested early and quickly taken to the mill
The olives are harvested early in the season and transported quickly to the mill, where they undergo cold extraction in a modern continuous system.
For the 2025/2026 harvest, a remarkably low free acidity of 0.13% is reported, together with 313 mg/kg of polyphenols.
Impressive numbers are welcome, but ultimately olive oil still has to taste good. N°04 has that part covered too.
Galioto N°04 is beautiful with salads, burrata and soft cheeses, grilled vegetables, fish, seafood, pulses and mushrooms.
It also works wonderfully over pasta, soup or warm crusty bread. The green tomato note makes it a natural partner for simple Mediterranean dishes.
We discovered Frantoio Galioto at Olio Capitale 2025 in Trieste. Among many excellent olive oils, these Sicilian bottles stayed in our minds.
Today we stock both the softer N°03 Moresca and this more characterful N°04 DOP Monti Iblei. Tasting them side by side is particularly revealing.
