With only 8000 bottles per year, production is small, but the taste and quality are great. Pressed from 100% Picuda, Hojiblanca or Picual olives from specially selected trees in the Sierras Subbéticas Natural Park, located in the center of the triangle between Màlaga, Còrdoba and Granada in Andalusia.
Picuda: The fragrance is green and fruity with hints of apple and unripe banana. You can clearly recognize the scent of fresh grass and almonds. The taste ranges from sweet to slightly bitter and a little bit spicy.
Hojiblanca: The balance, harmony and elegance in aroma and flavor allow us to enjoy the complexity of green and aromatic nuances of this freshly squeezed juice from the Hojiblanca olives.
The entrance on the palate is sweet, appreciating the olive leaf and herbaceous notes on the front. When moved backwards, the bitter medium and artichoke are appreciated with a very persistent intense final heat characteristic of the hojiblanca variety.
Picual: The aroma is intensely fruity with great complexity and harmony, with herbaceous notes of freshly cut grass, among the fruit descriptions the green apple, fig tree and banana stand out.
The entrance on the palate is sweet, appreciating the olive leaf and herbaceous notes on the front.
When moved back, the olive leaf and green, spicy and medium bitter banana are appreciated again and end with a pleasant astringent sensation. Its balance, harmony and elegance in aroma and taste allow us to enjoy the complexity of green and aromatic nuances of this freshly squeezed olive juice of the Picual variety.
