Fantastic Extra Virgin olive oil from the heel of the Italian boot, Puglia near the city of Bari.
Hand-picked olives are crushed on a traditional stone mill and then pressed.
From the olive varieties Coratina and Ogliarola.
The topper of the olive oils of this mill is the Affiorato. This oil is carefully scooped from the pulp by hand without being pressed (centrifuged). You can see that in this video from 3 minutes 50.
